Cassava -- widely cultivated as a starch similar to potatoes -- is used to make tapioca and other foods. The edible part of the plant is a starchy tuber with high amounts of vitamin C and minerals. Cassava must be prepared in a way that removes the toxic compound, hydrogen cyanide, otherwise it is unsafe to ingest.
