The full rich flavor of Amy's Black Bean Soup has made it a favorite with our whole family. Inspired by the black bean soup served at Hotel Santa Fe in Puerto Escondido, Mexico, this delicious soup is high in fiber, low in fat, and a good source of protein; it contains no cholesterol, gluten, or dairy. For a special treat, garnish with sour cream or grated cheese.
