Peanut Butter and Jelly Muffins
Level of Preparation: Easy Total Prep Time: 35 min
1 cup Arrowhead Mills Kamut Flakes
1 1/2 cups milk or WestSoy Soymilk Drink
1 egg or egg substitute
1/3 cup honey
1/2 tsp vanilla extract
1/2 tsp Hain Sea Salt
1 1/2 cups Arrowhead Mills Pastry Flour
1/4 cup Hain Vegetable Oil
4 tsp baking powder
Arrowhead Mills Creamy or Crunchy Peanut Butter
Fruit Preserves of Choice
Preheat oven to 375ºF. In a medium bowl, soak Kamut Flakes in milk for 10 minutes. Add egg, honey, vanilla, and oil and mix well. In a large bowl, combine dry ingredients. Add liquid ingredients to dry ingredients and gently mix just until moistened. Spoon one heaping tablespoon of batter into lightly oiled muffin cups. Then, place 1 teaspoon each of the peanut butter and fruit preserves on top of the muffin mixture, and cover with additional muffin batter until cups are 3/4 full (approximately one more heaping tablespoon). Bake for 15-20 minutes or until done. Remove muffins from pan and cool before serving.
Organic whole grain kamut (wheat) flakes, organic whole grain brown rice flour, organic fruit juice concentrate (apple, pear, or grape), organic whole grain amaranth flour, organic whole grain toasted quinoa flour, sea salt, ascorbic acid (vitamin C) and natural vitamin E (to preserve freshness).

Soooo excited about this product. As I have many food allergies, breakfast is a difficult meal. This cereal gives me a delicious, "breakfasty" meal alternative. I eat it w/raw goat milk & some nuts & either flax or chia seed for extra fiber. For those w/wheat allergies, this is a wheat product. I am highly allergic to wheat. I also react to Spelt (another form of wheat, highly glutenous), but I DO NOT react to Kamut. I will continue to buy.

this is a good cereal no sugar added great taste, this cereal mixes well with other cereal, lasts a long time in pantry.

I love these in the morning with almond milk. it's not too sweet, and really delicious.

At first I didn't think I liked these cereal but by the second bowl, I was sold. I like them a little soggy with almond and hemp hearts. I'll likely by them again.

I love that i can add this to my other breakfast cerelas knowing that it is not packed out with sugar. I also use it in baking a certain type of cookie. My 2 year old twins quite like it dry as a snack. goes down quickly in my house!
