Raisin Spice Cookies

Total Prep Time: 30 Minutes
Yield: 2 Dozen Cookies
1/2 cup honey
1/2 cup Hain Vegetable Oil
1 egg or 1/4 cup liquid egg substitute
1 cup Arrowhead Mills Organic Brown Rice Flour
1/4 cup potato flour
2 tsp baking powder
1/2 tsp baking soda
3/4 tsp apple pie spice
1/2 cup raisins
1/2 cup chopped pecans (optional)
Cream together honey, oil and egg or egg substitute. Add rice flour, potato flour, baking powder, baking soda and apple pie spice. Mix well. Stir in raisins and pecans. Drop onto lightly oiled baking sheet. Bake in 375°F oven 10-12 minutes.

This stuff is great because it is gluten free and has a very subtle flavor. I use this mainly to cut other gluten free flours to balance the strong flavors like buckwheat and garbanzo bean flours. One thing to take note is you will need some type of binding/thickening agent if you're not using any yeast. Xanthan or guar gum is highly recommended, otherwise your baked goods will turn out quite crumbly. This brand is just as good as Bob's Red Mill brand if not better, and cheaper!
I make pie crusts with this and love it. A tiny bit "grainy" in texture but that's to be expected and certainly worth the trade-off from wheat flour (fine but not as healthy)

I buy this because it has a legitimate certifying agency that can be contacted and questioned about their certifying process. I have switched from buying baking products from others to buying almost exclusively from Arrowhead Mills. Great product which browns nicely when mixed with other gluten free flours.
