A petite red bean with a firm texture and a rich nutty flavor. High in fiber and a good source of iron. Perfect for salads, soups, chilis and vegetarian burgers. Adzuki beans are the main ingredient in anko, a sweet red bean paste used in Japanese desserts.
I can remember learning about the glories of beans when I was a young lad in grammar school. Just before spring holiday, our teacher gave us glass jars filled with soil and a handful of brightly colored beans. I pressed those living seeds into the dirt and when we returned a week later, we were astounded by the sight of the green shoots that had sprung forth. My sense of wonder with beans, their pleasant flavors and healthful bounty thrives on in my line of heritage beans.
Adzuki beans have a rich history going back many thousands of years in the Far East, where the color red is associated with fortune and festivity, these vermilion beans are traditional fare at celebrations and serving them is believed to bring good luck to friends and family. Stovetop instructions : sort and rinse 1 cup beans. Place in pot with 3 cups water. Cover and bring to a boil. Reduce heat to medium-low and cook until beans are tender, about 1 hour. Add more water as needed while cooking to keep beans covered. Makes 4 servings (about 3 cups).
