- 2 cups Puffed Rice Cereal
- 1 cup Bob's Red Mill Rolled Oats
- 1/2 cup Bob's Red Mill Oat Flour
- 1/4 cup Bob's Red Mill White Rice Flour
- 1/4 cup Bob's Bob's Red Mill Soy Flour
- 1/4 cup Sugar
- 1 tsp. Bob's Red Mill Lecithin Granules
- 1/3 cup Ground soy nuts
- 1/3 cup Vegetable oil
- 1/2 cup Rice syrup
- 1/3 cup fresh lemon juice
- Zest from 1 lemon
- 2 tbsp. Powdered Sugar
Preheat oven to 300°F. Mix together the dry ingredients. In another bowl, mix the oil, syrup and lemon juice. Blend the dry ingredients into the juice mixture. Stir in the lemon zest. Spread mixture thinly onto nonstick cookie sheet, lightly coated with baking spray and press down. Bake for 15 - 20 minutes. Bars will firm up as they cool. Cut into bars. Sprinkle lightly with powdered sugar or frost as desired.
