For bread machines or by hand. Specially designed for those sensitive to wheat or gluten. This moist flavorful bread is ideal for sandwiches, toast, bread crumbs, croutons and other dishes that start with a basic loaf of bread. Contains a blend of gluten-free flours.

Bob's Red Mill products labeled Gluten Free are milled and blended in our dedicated gluten free mill room, and batch tested in our dedicated gluten free quality control laboratory. We use an ELISA Gluten Assay test to confirm that a product is gluten free.

Suggested Use

Baking Instructions by Hand

For Conventional Ovens

1 2/3 cups warm water (110°F) Milk (cow, rice, soy)
1 whole Egg plus enough Egg Whites to equal 3/4 cup
1/4 cup melted Butter or Vegetable Oil
1 tsp. Cider Vinegar

Place contents of package in large bowl of heavy-duty, tabletop mixer. Remove yeast packet and add yeast to warm milk in separate bowl. Let foam for 5 minutes. Add eggs, melted butter or oil, vinegar, and yeast-milk mixture to bread mix. Mix with regular beaters (not dough hook) at medium speed for 3 minutes, scraping down sides of bowl with spatula as necessary. Place dough in greased 9" x 5" nonstick bread pan. Smooth top of dough with wet spatula. Cover with oiled aluminum foil or plastic wrap and let rise in warm (75-80°) place until dough is level with top of pan (approximately 25-35 minutes). Remove cover. Bake at 375° for 60-65 minutes (do not under bake). Cover with foil after 10 minutes to prevent over-browning. To test for doneness, tap loaf with fingernail. A crisp, hard sound indicates a properly baked loaf. Turn loaf out on to wire rack and cool thoroughly before slicing.

Baking Instructions for 1-1/2 lb Bread Machine

1 2/3 cups Milk (cow, rice, or soy)
1 whole Egg plus enough Egg Whites to make 3/4 cup
1/4 cup melted Butter or Vegetable Oil
1 tsp. Cider Vinegar

Remove yeast packet from package. Have all ingredients at room temperature. Follow your specific machine instructions for adding yeast and the liquid and dry ingredients in the proper order. Be sure to whisk milk, eggs, melted butter or oil, and vinegar together thoroughly until very smooth before adding to bread machine. Set controls for setting recommended by manufacturer or setting you prefer (white bread, basic bread). Remove baked bread from bread machine and cool thoroughly on wire rack before slicing.

Note: This bread mix will work using egg alternatives. Follow manufacturer's instructions for substituting eggs.

Garbanzo bean flour, potato starch, corn starch, white grain sorghum flour, tapioca flour, cane juice, fava bean flour, xanthan gum, active dry yeast, potato flour, sea salt, guar gum, soy lecithin.

Sticky dough, but good bread

I was surprised to get any of the Bob's Red Mill products in Japan. I've tried through website and always received the message that it couldn't be done. But with iHerb, I had my mix in 3 days! Wow! Anyway, I used the mix in my bread machine which is half the size of an American machine, so I halved the recipe. At first I was dismayed with the sticky, wet dough, but the bread baked up perfectly. A good beginning for attempting to be gluten free.

I tried several mix bread, and this one is the best!!! The taste is very good! Also,it's lactose and sugar free!!! Just try it and see! p.s. Thank's for the good service and the fast shipping!!! I'm very happy!

I find the beany fragrance difficult to accept, sorry. I much prefer the rice-based one from King Arthur.

Best bread so far

This Gluten free bread is the best I've found so far to satisfy my toast and sandwich longings. I use the regular oven method to make it and it took me a few tries to get the recipe fluffy, but now it makes a nice loaf. The texture is great. The flavour is also good, although I can tell there is corn flour in there, which is not my favourite. The corn flavour is very slight tho. This bread does not crumble and get dry like rice bread sometimes does, so I really like it. I do tend to always toast it before I eat it. I do recommend this product!

Never fails

This bread mix is never fail. When my celiac mom comes to visit, I can count on this mix to turn out right, and believe me, some of them don't.
