It is a delightful blend of all-natural ingredients, including high fiber oat bran, wheat bran, soy flour and whole grain flaxseed meal, so you can be sure that the few carbs you do eat are nutritious. Low Carb Muffins
- 2 cups Low-Carb Baking Mix
- 2 Tbsp. Canola Oil
- 2 Eggs
- 1 cup Water
- 3 tsp. Baking Powder
- 4 Packets of your favorite low-carb Sweetener
- 1/2 tsp Vanilla Extract
Heat oven to 350°F. Lightly coat muffin tins with cooking spray. In a mixing bowl, combine dry ingredients. Make a well in center of dry ingredients and add the eggs, water, oil and vanilla. Mix with fork or whisk until blended, (approx. 1 minute). Divide batter into 8 muffin tins. Bake 22-25 minutes. Serve warm.

It really is the best one at least that I've found. You just need to be aware that there is no leavening agent in this mix, so it's not like Bisquick. You must add baking powder and/or yeast and shortening.

This is the best product. We use the muffin recipe on the package when we want a special treat for breakfast. I ordered eight packages recently. Unfortunately there was a lot of empty space in the package and there was loose flour over everything and falling out of the box when it arrived. Hope the shipping department is alerted that empty spaces needs filling!

The product is just fine. However, the shipping, I have a problem with. The 3 packages were put in a shipping box and the excess space in the box was not filled with packing of any kind and during the shipping the bags were bounced around inside and one of the packages was broken and contents spilled inside and all over. Please, make sure that the products are securely packed and don't leave empty space for contents to move around and get broken. Thank you
