Bob's Red Mill Low-Carb Baking Mix can be used cup-for-cup in recipes calling for other brands of low-carb baking mixes. It is a delightful blend of all-natural ingredients, including high fiber oat bran, wheat bran, soy flour and whole grain flaxseed meal, so you can be sure that the few carbs you do eat are nutritious. It's incredibly easy to use for making delicious pancakes, muffins, quick breads and more!

Suggested Use

Low Carb Muffins

  • 2 cups Low-Carb Baking Mix
  • 2 Tbsp. Canola Oil
  • 2 Eggs
  • 1 cup Water
  • 3 tsp. Baking Powder
  • 4 Packets of your favorite low-carb Sweetener
  • 1/2 tsp Vanilla Extract

Heat oven to 350°F. Lightly coat muffin tins with cooking spray. In a mixing bowl, combine dry ingredients. Make a well in center of dry ingredients and add the eggs, water, oil and vanilla. Mix with fork or whisk until blended, (approx. 1 minute). Divide batter into 8 muffin tins. Bake 22-25 minutes. Serve warm.

Vital wheat gluten, whole grain oat flour, oat bran, oat fiber, flaxseed meal, whole grain rye flour, wheat bran, whole grain soy flour, sea salt (magnesium carbonate), evaporated cane sugar.

Doesn't yield different results from normal flour

I substituted 1 cup of my wholemeal flour with this for my bread loaf and the results turned out exactly the same (or even slightly more risen, due to more vital wheat gluten in this mix compared to wholemeal flour) as normal. Good for those who needs to go on low-carbs diet, but this is a little too pricey to be sustainable.

Low carb muffins

This is the best product. We use the muffin recipe on the package when we want a special treat for breakfast. I ordered eight packages recently. Unfortunately there was a lot of empty space in the package and there was loose flour over everything and falling out of the box when it arrived. Hope the shipping department is alerted that empty spaces needs filling!
