Keeps best refrigerated or frozen.
- Heat water to boiling, add butter or margarine and salt.
- Remove from heat, add cold milk.
- Add potato flakes, stir gently, fluff with a fork. Do not whip!
- Let sit for 2-3 minutes for potato flakes to thicken.

*Depending on the consistency you prefer for your mashed potatoes, more or less liquid can be added to make creamier or drier mashed potatoes.
Follow step 1 above, except add milk with the water, butter and salt in a large bowl or dish. Place in microwave oven at high setting until hot (approximately 3 minutes for each 4 servings). Remove from microwave and follow step 3 and 4.

The product, potato flakes, was quite satisfactory. I have used a number of Bob's Red Mill products for years, such as the gluten flour, semolino flour, and oat bran. However, I was disappointed to discover, on delivery, that there were additional ingredients besides potatoes in the flakes(mono- and diglycerides, and citric acid). I had tried, via a Web search, to find a product like the one I had just used up, that was pure potatoes. I was unable to determine from information on the Web that there were any ingredients besides potatoes in the Bob's Mill flakes.
This is a quite way to have mash potatoes, or thickening in soups or mixed vegetables. I liked these flakes thick,using almond milk and chopped or minced dried onion along with other seasonings. Some times I also add minced dry garlic as well. Again I want to keep a number of these packages on hand at all times.

These are perfect for weekday dinners when you want mashed potatoes but do not have the time or energy to peel, boil, chop, mash and whip potatoes after a long day at work. Plus, they are delicious! Give them a try!

I needed 2 tbsp. of potato flakes. ha ha This is a nice product. It tastes great, and worked well for me. I am going to make mashed taters with this and come back and add my find.
