Made from the finest soft white winter wheat, Bob's Red Mill Unbleached White Pastry Flour has a low gluten content, making it perfect for use in biscuits, pancakes, pie crusts, cookies, muffins, brownies and cakes. It performs much better than all-purpose bleached flours in any recipe calling for baking powder or soda as a leavener.

Old Fashioned Chocolate Cake
½ cup cocoa
1 cup boiling Water
1 ¼ cups Bob Red Mill unbleached White Pastry Flour
1 tsp. baking soda
¼ tsp. salt
¼ tsp. baking powder
½ cup butter, softened
1 ¼ cup sugar
3/4 tsp. Vanilla Extract
Preheat oven to 350°F. Whisk cocoa and boiling water until smooth, set aside. Sift the flour with the baking soda, salt and baking powder, set aside. In a mixing bowl, cream butter and sugar until light and smooth. Add the eggs one at a time, mixing well after each egg. Add the vanilla. Add the cocoa mixture and flour mixture in alternating portions, starting and ending with the flour, as mixer is running. Bake in two 8-inch round pans in a 350° oven for 30 to 35 minutes, or until done
