I used this powder for the first time today together with their cacao butter, some MCT oil, pastured butter, organic crushed vanilla beans and the combo was divine. This powder is lighter in color than the one I usually use (Now Foods, Certified Organic, Cocoa Powder) and in my opinion tastes better. From what I can gather, lighter in color usually means less processed. I will start using this powder from now on even though it is SLIGHTLY more expensive than the cocoa powder from Now Foods. Bring on more products from Earth Circle Organics, one of my new favorite brands
I really like Earth Circle Organics, and usually use their Bali Cacao Powder. Once they introduced the Ecuadorian, I tried it and now use both depending on what I am making - it has a very different, richer, 'darker chocolate' taste than the Balinese cacao. When I put this in raw chocolate it produces a dark balanced flavor.

I love Earth Circle products. This raw cacao powder is second only to their Balinese variety, but at a lower cost. I usually buy one of each.

Jan 2016: For baking, it's OK, although it doesn't have a particularly rich taste. However, both I and the children to whom I served hot chocolate made from it the other day thought that it had a rather unpleasant, slightly bitter aftertaste. I much prefer some of the other cocoa powders sold here, such as TRU RA (now called "Big Tree Farms, Organic Raw Cacao Powder"). April 2016 Update: Having experimented over the past few months with hot chocolate made from different homemade nut "milks" (walnut, pecan, macadamia) and coconut milk, using several brands of organic and/or raw cacao powder, I've come to the conclusion that not every type of cacao goes equally well with every nut milk/dairy. Although I didn't especially care for the Ecuadorian made with cow's milk, or with diluted coconut milk, it was fabulous with pecan, so I've changed my rating to a 4. Live & learn!
