Eden Kamut Udon is made from North American family farm organically grown kamut, aka Khorasan wheat Triticum turgidum that is easier to digest than modern wheat. Delicious in kombu shoyu soy sauce broth (dashi), stir fries, salads, with a favorite sauce or sprinkled with gomasio (sesame salt). Low in sodium / protein rich.
Cook in boiling water for 8 to 10 minutes or until tender, drain, rinse, and serve.

Not a significant source of Vitamin A or C
As a person who avoids most corn/wheat products and is allergic to rice products, I have searched for years for a pasta that most reminds me of the 'old' days when I ate wheat pasta. In my opinion, this is the closest to taste as I can get to regular pasta and at the same time avoid rice/corn/wheat. The noodles are thick and hearty and stand up to sauce and meat and vegetables. I reorder this regularly and depend on it to satisfy my pasta cravings.
