The length of time for the expiration date or "best used before" date depends on the type of product, as well as the brand.
Perishable items (such as flax oils or certain probiotics) generally have shorter expiration dates. Although our warehouse is fully air-conditioned, these more fragile items are put in cold storage (freezer or refrigeration unit) for maximum freshness.
Our receiving department does its best to verify and then enter the correct expiration dates for all incoming products. However, discrepancies do occur from time to time. This being said, the exceptionally high turnover at iHerb ensures that our inventory is among the freshest in the industry.

Soak: Wash beans, cover with 3 inches water. Soak 6 to 8 hours or overnight. Water plants with soaking water.
Place in a pot with 3 inches water, bring to a boil, turn off flame, cover, and let sit 1 1/2 hours. Discard soaking water.
Cook: Place 3 cups of water per 1 cup of soaked beans in a heavy pot. Bring to a boil. Cover, reduce flame, and simmer at least 1 1/2 hours.
Note: 1/2 cup dry beans = 1 1/2 cup cooked

These beans cook up just right if soaked overnight, they are smaller than store bought pintos but have lots of flavor. When cleaning these bean I find very few broken beans and on or two errant rocks. I will continue to buy these organic beans.
I really enjoyed fixing these. These are consistently nice and mature, and cook up well.
