This Tamari is the type of soy sauce characterized as Wheat Free. Fermented more quickly than traditional tamari by raising the temperature of the mash. Koji inoculated organic soybeans are aged for six months in this accelerated brewing process. Tamari was originally the liquid that rose from miso during fermentation. Today it is the mash brewed as a sauce. Its flavor reminds one of miso, much more pronounced than shoyu. In Japan, tamari is used in food manufacturing. Shoyu is for cooking.
Meticulous tracking and audited records guarantee the purity of this food from the farm to your table.

I go through a lot of tamari, and I was very pleased to find this 20 oz. size as an alternative to the common 10 oz. Eden Foods is a stellar food company. They are the U.S.'s first third-party organic food manufacturing facility. Their tamari soy sauce is made by those skilled in ancient methods of koji Aspergillus oryzae fermentation. Koji spore inoculated whole soybeans are aged in cedar casks through two full cycles of the seasons. It is the real deal. Unlike most soy sauces, tamari does not have wheat in it and is gluten-free. And as opposed to refined table salt, this contains sea salt.
I love having an alternative to the typical soy sauce made from GMO soy beans. It also tastes great.

it has quite a sharp flavour, though. I prefer my tamari a bit more mellow

Excellent organic tamari. Very salty though, so use sparingly.
