Alison's Coconut Fruit Parfait Recipe
- 1 cup Blueberries
- 1 cup Blackberries, cut in half
- 1 cup Strawberries, sliced
- 1 cup, Mango in chunks
- ¼ cup Apple Juice
- 5 large Bananas
- 2 tsp Lemon juice
- 1 cup Let's Do... Organic Reduced Fat Shredded Coconut
Gently toss all fruits (except bananas & shredded coconut) and apply juice in a bowl. Set aside.
In a blender, blend the bananas and lemon juice until smooth. Add the shredded coconut and blend for an additional 2-3 minutes or until extremely light and creamy.
To assemble the parfaits: in the bottom of 4 large glasses or dessert dishes, place alternating layers of the mixed fruit & banana mixture, ending with the banana mixture and a few berries.

I bought these for the reduced fat content, but honestly they really lack the flavor of regular coconut flakes. They still work well as a binder in recipes but it doesn't taste much like coconut, even when roasted.

Like the fact that it's lower in fat. Don't notice any difference in taste, but I do like a slightly bigger shred. Pretty impressive.
