Chocolate Tapioca Pudding
3 Cups Native Forest Organic Coconut Milk
1/4 cup Let's Do...Organic Granulated Tapioca
1/8 tsp salt (optional)
1 Tbsp sugar
1/2 cup chocolate chips
In a saucepan, simmer the coconut milk, tapioca granules and salt (if using). Cook for 12 to 15 minutes while stirring often, until tapioca is completely transparent. While this is cooking, melt chocolate chips in double boiler or microwave. Remove tapioca from heat, stir in sugar and melted chocolate until completely blended. Refrigerate to room temperature. Stir pudding well to break up the tapioca before serving. Option: Garnish with sliced bananas or Let's Do...Organic shredded coconut.

I used tapioca all my life in Argentina. When I moved to Sweden, I couldn't find it anywhere. I was so happy to find it at iHerb. This is a nice and very good quality product. I use it in soups, desserts and other dishes.

I don't like the recipe on the box but the actual product is great! Will buy again and my friends have also bought this as well!

Really good, I really liked these however when I read the recipe on the box there was hardly any sugar in it and it tasted really unsweetened. Next time I make this I will just double the sugar amount. Also, I used regular milk.
