Guar gum is the ground endosperm of the guar bean, an annual legume native to India and Pakistan. It's primary use is as an emulsifier and thickening agent; it has 8 times the thickening power of cornstarch.

Suggested Use

Guar gum is used as a thickener, emulsifier and firming agent in baked goods, jams and jellies, soups, salad dressings, sauces, syrups, juices and dairy products. Use at a rate of up to 1 percent by weight, which is equal to one- half teaspoon per a cup of liquid.

Warnings

This herb should be ingested only with adequate liquid. Not for use by persons with bowel obstruction.

Good for baking

Good product for baking low-energy foods. It gives much better consistency than xanthan gum. Yet in high amounts it makes foods too gummy.

great for fruit sorbet

exellent product for frozen fruit sorbet: guar gum inhibits the formation of ice crystals once the desert is frozen.

Unique thickener and emulsifier

Use a *tiny* amount for big results in many products! Works in baked goods, ice cream, salad dressings, and barbecue sauces.

Great in smoothies!

I bought this for using in smoothies, "protein ice cream" (google that and you'll find recipes!) and other icy things. This makes it very smooth and creamy. A word of caution, though: too much might upset your stomach if you're sensitive like I am. My only other complaint is that I wish it had come in a resealable package of some sort. Not too big of a deal and it wouldn't deter me from getting this product again, but I do hope for something to be done about it!
