Suggested Use

Simple Tabbouleh Salad

Ingredients

  • 1 cup Kashi Nuggets
  • 1 large organic Roma tomato
  • 1/2 organic red bell pepper
  • 1/2 cup chopped parsley
  • 2 Tbsp organic lemon juice
  • 1 Tbsp extra virgin olive oil
  • 1/2 tsp salt or Creole salt seasoning (if more spice is preferred)
  • 1/2 tsp pepper
  • 1/2 tsp chopped organic garlic
  • 1/4 cup water

Instructions

  1. Chop tomato and bell pepper into small pieces.
  2. Combine all of the ingredients, except water, and stir.
  3. Refrigerate until mixture is chilled.
  4. About 30 minutes before you are ready to serve, add water and stir. Depending on preferred consistency of salad, you can add more water for smoother texture or less water for crunchier texture.
  5. Suggest serving with toasted pita bread. Enjoy!

If you are a Grapenuts fan, try a box, you may never go back. Crunchy, tasty, good fiber and protein. Low in Sugar!! It's filling without being heavy.

I have been eating the 7-grain flakes from Kashi and I thought I would try it in the nugget form. These nuggets are surprisingly salty and I really did not enjoy them. I'm not sure breakfast cereals should have such a high level of sodium. The only reason I gave it three stars was that I found it quite palable when I sprinkled some on top of my pear and apple compote - making it a healthy substitute for an apple crisp. I have two boxes and I would not purchase again.
