Suggested Use

Gluten Free Popovers

4 large eggs

2 tablespoons melted butter or oil

1 1/4 cups lukewarm milk

1 cup multi-purpose flour

1/4 teaspoon xanthan gum

1/2 teaspoon salt

  1. Preheat the oven to 400°F. Grease a 12-cup popover pan or muffin pan.
  2. Whisk together the eggs, butter, and milk in a large bowl. In a separate bowl, whisk the flour with the xanthan gum and salt, then gradually sift and whisk into the liquid ingredients until you have a smooth batter.
  3. Pour the batter into the greased cups, filling each about 2/3 full.
  4. Bake for 25 minutes, then reduce the oven heat to 350°F and bake for an additional 15 minutes, until the popovers are deep brown. Remove from the oven, let firm for 5 minutes, then remove from the pan and serve immediately.

Yield: 12 popovers.

The Best Gluten Free Flour Blend

I recently needed to remove gluten from my diet and began to experiment with the various gluten free flour blends out there. I found that most of them leave a after taste that sometimes was not so pleasant. King Arthur leaves no after taste and I am able to use my regular recipes, just replacing the flour with the King Arthur gluten free blend and a teaspoon of xantham gum. It is great!

good flour

I've tried a number of gluten free grain flour or flour blends and this has been the best I ever used. The muffin mix always makes better muffins, though since it has a lot of sugar I prefer using this MP flour. King Arthur has a number of recipes on their site for gluten free baking.
