You will need:
Eggs, oil, water or milk, any kind
For one batch of waffles:
Combine 2 eggs, 2 tablespoons oil, 3/4 cup water or milk. Add to 2 cups of dry mix. Blend well. Add more liquid, if needed.
Pour onto preheated, sprayed waffle iron to cover bottom. Yield: 5-6 waffles.
For one batch of pancakes:
Follow directions above decreasing water to 1/2 cup. (If you like your pancakes thinner, you can add more liquid.)
Pour onto preheated, sprayed pan or griddle. Yield: 6-8 pancakes. Add toppings of your choice and enjoy!
Note: Both waffles and pancakes can be frozen after cooking then reheated in a toaster or toaster oven.

This is the best pancake mix we've ever had. The batch is "family sized" (single people can cut it in half to get four meals out of the bag). There is a slight peppery flavor, not too sweet, and is fabulous on low heat with extra coconut oil!
I love this waffle mix!!! I use goat milk when I make them, add a little flax seed, sometimes apples or peaches. I use it more for a base mix that I add to. I usually have to add a little more baking powder and less of the mix itself when I add the flax seed. My son loves cinnamon and cloves added as well. It is so fast to mix up, I can do it before school and know he has had a hot good breakfast. I am not crazy about the pancakes, they don't rise at all.

Gluten free baked goods can taste peculiar and have a bad after taste, but not these pancakes! I ordered more and also decided to try Namaste pizza base. I already use their Brownie mix.
It needed Eggs to make it taste more like pancake or waffle

I can't eat eggs. I am trying this out although I know it requires Eggs in the mix. However, it is quite tasteless without the egg, I supposed. It is kind of sticky texture but if i panfry it with more oil, it will be crispy from the side. Have not try with egg replacer.

Plain, with added carrot shavings or blueberries: This waffle mix is a hit with my gluten intolerant daughter as well as my son. I made waffles and pancakes before with regular gluten free flour, but this mix has much more taste.
