Citric Acid helps to inhibit the formation of mold and other bacterial growth, an all-too-common occurrence when sprouting in a jar due to high temperatures and humidity. Citric Acid is also useful for canning vegetables and fruit preserves.

Citric Acid is a food grade acid that is present in many natural foods. It can be used to reduce spoilage in sprouting by adding 1 tsp. per quart to soak and rinse water.
Citric Acid is also useful in canning, drying or freezing foods. It can be used to preserve Vitamin C content, retard spoilage and prevent discoloration. Use 1 tsp. per quart of water or juice for most fruits and vegetables.

I was pleased with how quickly my citric acid arrived.(IHerb.com ROCKS!) The citric acid appears to work well. I am using it for canning tomatoes and the only thing I would have liked more would have been additional info on the labelfor canning and not just sprouting purposes. FYI- I contacted NOW foods and was told to follow FDA amounts on canning which are 1/2 tsp. per quart of tomatoes and 1/4 tsp. per pint.
I use citric acid to make a delicious lemon water. Usually the citric acid is terribly expensive but with this unbelievable price I can make the lemon water all the time. Thanks iHerb.
