wheat meat

i got this so i can make seitan, a wheat 'meat'. High protein and can be quite tasty, depending on the seasonings you put in it. I put a barbeque dry seasoning mix in it and it makes it taste a little bit like lamb when fried.

Great Source of Protein!

Gluten flour is the portion of wheat which contains the highest concentration of protein. Gluten is found naturally in flours made from wheat and other related grains. Adding gluten flour to dough recipes can boost the concentration of gluten in the mix for the purpose of giving increased elasticity to the final product. It adds a chewy texture to breads, pizza dough, and bagels and can be used to make seitan and other vegetarian and vegan "meats". In bread recipes, it can be used at an approximate ratio of 1 tablespoon for each cup of all-purpose flour. When making faux meat recipes, be prepared to use much more because you'll be using the wheat gluten flour as the main ingredient. Gluten flour is not suitable for people with wheat or gluten sensitivity. My experience with the Now Foods brand has been great. Some other wheat gluten flours I have tasted have had a strange, bad flavor. This brand tastes as it should and ounce for ounce, the price is great. I really enjoy the added chewiness it gives to my homemade bread, bagels, and pizza crust. I've also used it to make vegan pepperoni and it's amazing.

This is the best trick to make melt-in-your mouth 100% whole grain bread every time. I use 1Tbs per 1cup whole grain flour. Or sub for 1/12th of the flour in a recipe. Better texture and taste, without fail. My kids complain when we buy even top quality bread at the store, because nothing compares with home-made-done-right.This is the "right" stuff. Of course the price cannot be beat for this weight increment- well done again, now foods and iherb.
