The length of time for the expiration date or "best used before" date depends on the type of product, as well as the brand.
Perishable items (such as flax oils or certain probiotics) generally have shorter expiration dates. Although our warehouse is fully air-conditioned, these more fragile items are put in cold storage (freezer or refrigeration unit) for maximum freshness.
Our receiving department does its best to verify and then enter the correct expiration dates for all incoming products. However, discrepancies do occur from time to time. This being said, the exceptionally high turnover at iHerb ensures that our inventory is among the freshest in the industry.

Mung Beans are one of the most popular sprouting products in use today. NOW Real Food Mung Beans are an excellent source of fiber and protein, making them a good meat substitute for vegetarians and vegans. Mung Beans have a mildly sweet flavor and are widely used in Asian cuisine.

Place two tablespoons of seeds in a sprouting jar with three times as much water as seeds. Soak overnight. Rinse seeds and drain twice daily, store in low humidity without direct sunlight. About the fourth day, place rinsed sprout jar in indirect sunlight to develop green chlorophyll leaves.
Note: We recommend adding 1/4 tsp NOW Real Food Citric Acid Powder to each rinse cycle as a preservative against spoilage. Sprouting at temperatures above 80° F and humidity of 70% may be impossible.

HEY! These are surprisingly good! I bought these for healthy nutrition, but boy was I surprised when they tasted so good! I actually originally bought them to sprout, but then I learned that under my Protein Metabolic Type, sprouted beans and seeds are really not the best for me, so I decided to soak and cook them instead (using them this way is good for me). Apparently, sprouting them must leave them in too high of a carbohydrate stage for a Protein Type person, whereas cooking them pushes them into the protein realm. Anyway, I soaked them overnight and cooked them as a side at the next evening's dinner, just like you would with any other dried beans. After cooking and draining, I added some coconut oil and some Klamath Miracle Krystal salt (himalayan salt), and both my husband and I thought they were just delicious. They had an obviously milder and more pleasant flavor than all other dried beans or peas that I have cooked before. I'm looking forward to cooking these as sides with dinner occasionally from now on!
So far I have gotten 100% of the mung beans to sprout. Very pleased.
