Rice Flour Crepes
- 1 cup white rice flour, 1/2 teaspoon salt,
- 2 eggs beaten (or egg substitute)
- 1 cup milk (dairy, soy or rice)
- 1 tablespoon butter or margarine
Beat eggs in a medium-size bowl; add rest of ingredients and blend until smooth. Heat a lightly-greased, non-stick skillet to medium temperature. Pour a 1/4 cup of batter onto skillet and turn skilled to evenly distribute batter in a circle. Cook about 30 seconds per side. Add your favorite fresh fruits or preserves and enjoy! Serves 12.

I really love this flour, and all the products NOW FOODS offers. As my 3 school-aged children and I all have Celiac disease, I find myself having to bake constantly in order to facilitate their food needs. I use this flour with NOW's tapioca flour, storebrand cornstarch, and a bit of potato flour to make Bette Hagman's "featherlite" flour mixture (1 c tapioca flour: 1 c rice flour: 1 c cornstarch: 3tsp potato flour) . I find it works superbly as a replacement for regular white flour in just about every recipe which calls for flour. This is also a TERRIFIC price for this item. I buy it in bulk, mix up mass quantities of the featherlite mixture and keep it on hand for daily baking. Many thanks to iherb.com for such a great deal on this product!

I use this as a thickening agent in recipes that call for flour to thicken.....doesn't seem too gritty.
