Hi-Lo Banana Chocolate Chip Muffins
- 2 cups plain Hi-Lo cereal divided
- 2/3 cup fat free milk
- 4 tablespoons mini semi-sweet chocolate chips, divided
- 1-1/3 cup whole wheat flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1-1/2 cups mashed ripe bananas
- 1/4 cup honey
- 2 large egg whites
- 3 tablespoons canola oil
- 1 teaspoon vanilla extract
Preheat oven to 400°F. Spray 12 (3" dia.) muffins cups with non-stick cooking spray. In a large bowl, combine 1 3/4 C cereal mix milk, stirring to coat. Let stand 3 min. Meanwhile, coarsely crush remaining 1/4 C cereal into a small bowl. Add 1 Tbsp chocolate chips. Set aside. In a medium bowl, combine flour, baking powder, salt, and baking soda; mix. To cereal mixture, add bananas, honey, egg whites, oil and vanilla; mix well. Stir in remaining 3 Tbsp chocolate chips. Add flour mixture, stirring with a rubber spatula just until combine (Do not overmix). Fill muffins cups to the top. Sprinkle each with about 1 Tsp crumb mixture. Bake at 400°F for 20-25 minutes. Allow to cool in pan on wire rack for 5 minutes. Makes 12 muffins.
