Protein Plus roasted peanut flour provides a healthful, lower-fat and gluten-free boost to a variety of foods. It is a great thickener for soups, a flavorful and aromatic ingredient for breads and pastries, as well as a creative coating for meats, fish and other center-of-the-plate dishes. Triple Peanut Butter Cookies
- 1 1/4 cups packed light brown sugar
- 1 cup peanut butter (creamy or chunky)
- 2 large eggs
- 1 cup Protein+Plus Peanut Flour
- 1/4 cup chopped roasted peanuts
- 1 teaspoon baking soda
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon salt
Preheat the oven to 350°F. In a medium bowl, beat together brown sugar and peanut butter with a wooden spoon. Beat in 1 egg at a time, mixing well after each addition. Mix in peanut flour, peanuts, baking soda, vanilla and salt.
Roll dough into 1 1/2-inch balls. Place balls two inches apart on a cookie or baking sheet lined with parchment paper or foil. Use a fork to make criss-cross marks on tops of cookies and to flatten to about 1/2-inch thickness. Bake 10 minutes or until cookies are just set. Transfer cookies (still on parchment or foil) to a wire rack; cool completely. (Cookies will firm up upon cooling.)
Optional add-ins: If desired, stir 1/2 cup semisweet or bittersweet chocolate chips, and/or golden raisins or dried cranberries into the dough.
Manufacture in a facility that uses peanuts.

I think perhaps the other reviewer was referring to Trader Joe's which used to have peanut flour, but discontinued it. I love that iHerb started carrying it. Peanut flour is so nutritious and versatile. I use it in baked goods, as a substitute for peanut butter, in smoothies, and even in things like African Peanut soup. It's delicious and higher in protein than using plain old peanut butter.

I actually don't use this to make peanut butter, I add it to smoothies, nicecream, or make low-fat satay sauce. It is also excellent when added to bliss balls, a great kitchen ingredient!

I made a bread of this and it was really really tasty! I loved the smell, the taste and not least amount of protein on it! Recommended!

I use this as a protein boost in cereal, and as a low fat option in satay sauce and mixed with water and salt as a spread. It is now a pantry staple that I wouldn't be without.
