This tiny bottle packs the circumference of an orange-flavor-wise, that is. The scent alone brings the sun out. Even at night.
1 2/3 cups flour
1 tablespoon baking powder
1/4 cup sugar
1 teaspoon ginger powder
1/4 teaspoon coriander seed
1/4 teaspoon garlic powder
1 1/3 cups milk
1/3 cup oil
1 teaspoon orange flavor
Preheat oven to 375 degrees. Grease muffin pan (12 count).
Combine all dry ingredients in a large mixing bowl. Combine liquid ingredients in a medium bowl. Stir liquid mixture into dry ingredients until just moistened.
Spoon into muffin pan. Bake 15 to 18 minutes, or until lightly golden.
Sprinkle tops of muffins with crushed pieces of crystallized ginger before baking.
Organic sunflower oil, organic orange oil.
A real burst of orange flavour. Tastes just like freshly squeezed oranges. Goes great with anything chocolate, can't wait to use in baking!

I tend to make smoothies and juice that could be described as "very green" even to those who like green drinks. I'm playing around with this to lighten up the taste when I get too heavy handed with the greens. I haven't tried it in a hot chocolate drink yet, but will now that it's getting cooler. I'm also planning to try this in fizzy water over ice and will sweeten with a dash of stevia, if needed.
