Blue Corn Bread
Level of Preparation: Easy
Total Prep Time: 30 Minutes
Yield: 1-8"x8" Pan or 6 Large Muffins
1 cup Arrowhead Mills Organic Blue Corn Meal
1/2 cup Arrowhead Mills Pastry Flour
1 1/2 tsp. baking powder
1/4 tsp. Hain Sea Salt (optional)
1 tsp. Honey or maple syrup
1 egg or 1/4 cup liquid egg substitute, beaten
1 cup water or milk
Mix dry ingredients. Blend liquids. Combine mixtures and pour into an eight-inch-square oiled pan or muffin cups. Bake at 425° for 15 to 20 minutes, or until top is golden brown.
Spicy Corn Crackers
Level of Preparation: Intermediate
Total Prep Time: 45 Minutes
Yield: 4-5 Dozen Crackers
1/2 cup buttermilk
3 tbsp. Hain Vegetable Oil
1 cup Arrowhead Mills Organic Blue Corn Meal
1/2 cups Arrowhead Mills Pastry Flour
3/4 tsp. Hain Sea Salt
1/4 tsp. baking soda
1/8 tsp. cayenne
1/2 tsp. Chili powder, or more, to taste
1 tsp. garlic powder
Preheat oven to 350°F. Combine buttermilk and oil. In separate mixing bowl, thoroughly stir together the dry ingredients. Add milk mixture and stir until dough forms a ball. Knead on floured board (adding a little more flour if necessary) about 5 minutes. Divide dough in half and shape each into a 12-inch square. Cut into 2-inch squares. Sprinkle with additional salt or paprika. Bake on lightly oiled baking sheet for 15 minutes or until slightly brown around edges. Cool slightly before removing from baking sheet; finish cooling on wire rack. Store in loosely covered container.

Great alternative to yellow corn, which may have GMO issues.

The flour made the dough a bit sticky, and the final product (tortillas) missed the good taste of corn, but I will try a new recipe. :)

I buy this product is not for use in the kitchen, and for esoteric purposes. Suits me just this meal this firm. There is no better. This is the best product for Ho'oponopono.

Never tried any other brand so there is nothing to compare with. As for the blue corn flour itself, it's very sticky. I made tacos and it was very messy. Tacos turned out light violet on color, very unusual.
