Savor the whole grain goodness of spelt, an ancient relative of modern-day wheat. Spelt has never been hybridized, so it has retained many of its original characteristics from antiquity, including complex flavor and whole-grain nutrition.

Spelt is an ancient relative of durum wheat that originated in the Near East over 8,000 years ago. This heirloom grain later spread throughout Europe, becoming especially popular in Germany, where it was farmed throughout the Middle Ages. With a chewy texture and sweet, nutlike flavor, spelt is a great grain for hot cereal or to use in place of rice for pilaf, soup or cold salads. It digests easily and is a good source of iron.

Basic Cooking Instructions

For best results, soak 1 cup spelt in water overnight, then drain. Bring 3 cups water or stock to a boil in a pot. Add spelt; cover, reduce heat and simmer until grains are chewy, about 40-60 minutes (65-80 minutes if grains were not soaked). Drain excess liquid. Makes 4 servings (2 1/4 cups).

The grain cooked up well, I followed the recipe on the back of the bag but found it was a bit hard to chew, like rice not done enough. Taste was very nutty and good.

So delicious and nutritious. Rich in dietary fiber, protein, B vitamins (niacin, thiamin, folic acid, vitamin B6, riboflavin), vitamin E, manganese, phosphorus, magnesium, copper, iron, zinc, selenium, potas sium, calcium, phytosterols and antioxidants, this ancient relative of durum wheat is beneficial for people suffering from diabetes, hypertension, high cholesterol, obesity, heart disease, gastritis, acid reflux, nausea, indigestion, osteoporosis, arthritis, rheumatism and even cancer: it helps stabilize blood sugar and regulate insulin levels, prevents blood spikes keeping you full longer, aids digestion, prevents heartburn and acid reflux, increases appetite, soothes the stomach lining, reduces colon inflammation, normalizes blood pressure, lowers triglycerides and LDL or "bad" cholesterol levels while increasing HDL or "good" cholesterol, protects against strokes, atherosclerosis and peripheral arterial disease, helps maintain healthy bones and teeth, and even reduces the risk of cancer. Love the nutty and crunchy taste of this nutritionist grain!! Spelt is the best grain for consumption, gentle your stomach and easy digestion. An alternative choice for rice salad ;)
