Traditional koji brewed rice cooking wine, no added sugar or synthetic enzymes. Shoyu soy sauce and Mirin are the right and left hands of Japanese cuisine. A few shakes in dashi broth, soups, sauces, stir fries, dips, and dressings is ambrosial. A glaze for baked and grilled foods. The eminent marinade.

So happy to find a gluten free mirin ... most of the mirin available, though fermented from rice, have alcohol added to it ... and I cannot confirm if that added alcohol is gluten-free!! Have already ordered more. I use this not just in Japanese cooking, but also in Chinese dishes ... the Chinese rice wine I used to use before contains other grains like wheat and sorghum. So I am very very happy to find this here.

Love the mostly natural ingredients, no sulphites added like in some white cooking wines. Great for slow stews, both asian and western. A tad expensive tho.
