Your will need:
Makes 8-5" Pancakes
1 cup Arrowhead Mills Oat Brand Pancake & Waffle Mix
1 egg, beaten or egg substitute
1 tbsp. Hain Canola Oil
2/3 cup milk, WestSoy Soymilk or WestSoy Rice Milk or water
1/4 tsp. Hain Sea Salt (optional)
- Stir all ingredients only until lumps disappear.
- Let batter sit for one minute.
- Cook on preheated (375°F-400°F) lightly oiled griddle or pan, turning when bubbles form on surface and edges begin to dry.
For thicker pancakes, use less liquid. For thinner pancakes, use more liquid. Suggested variations: Stir in one or more of the following into the batter just before cooking: 1/4 cup fresh berries, 1 tsp. vanilla, 1/2 tsp. ground cinnamon, 1/4 cup chopped nuts.

When I get the occasional craving for pancakes, this mix hits the spot. I make it with sweetened almond- or soy-milk, plus a tiny bit of ghee in the frying pan for extra flavor, then pour maple syrup over them. Adding bananas is also delicious. The directions on the package are easy and get good results -- though I agree with the NJ reviewer: adding more liquid to the mix will help the texture. I like my pancakes more hearty than fluffy, but adjust as you like!

I like the oat bran mix, you tend to taste hints of oatmeal in it. It is filling, compared to pancakes that are made with flour. I made it according to the package instructions, andone pancake is enough to fill me up, for white plain flour pancakes, I can consume up to 3 of them, which is a good thing. With maple syrup, it is delicious. However, as expected, It is less "smooth" in taste than if you used plain white flour.

I like the texture of my pancakes with this batter. I add blueberries and hemp seeds to the batter. Water works just as fine as milk product or substitute.
