Lentils are quick-cooking and remarkably nutritious, providing a healthy dose of fiber, iron and protein in every serving. The mild, earthy flavor make lentils a terrific choice for hearty soups, chilis, salads and pilafs.
Stovetop: Sort and rinse 1 cup lentils. Place in a medium pot with 3 cups water and bring to a boil. Reduce heat to medium-low and cook until tender, about 20 minutes. Add more water as needed to keep lentils covered with water while cooking. Makes 4 servings (about 3 cups).
