Time-honored, 100% whole grain noodles. Delicious and hearty. Serve hot or cold in broths, soups, stir-fries, and salads. Roll them up in nori sheets to make soba sushi, an Eden favorite dipped in shoyu. Buckwheat is Nature's best source of the flavonoid rutin. Soba is endlessly versatile, quick and easy to make.
Add to boiling water for 8 minutes or until tender. Rinse with cold water. Don't overcook.

I love this covered with a spicy organic tomato sauce. Buckwheat is a healthy alternative to wheat - a necessary alternative for me as I can't eat wheat. Cook it for the 8 minutes recommended, and rinse it briefly with cool water, otherwise you'll have to contend with a sticky ball of noodles.

This was my first experience with soba noodles and I wasn't prepared for the amount of foam produced when cooking them. I'll keep that in mind when my next order arrives ;-)

Being ill.. this is the only so called carb i can consume but its SO EXPENSIVE.. along with that.. its not easy to get right it when boiling.. or i would have rated it 4 stars
