The Coconut Secret Story...
When both our parents learned they were diabetic, my brother and I were deeply inspired to search the world for pure, raw, truly delicious, low glycemic foods. We were rewarded and blessed beyond expectations, in our discovery of the traditional products made from the sap of the wondrous coconut tree. It is our great joy to be able to share with you the gifts of these exceptional ingredients.

Health Secrets of Coconut Nectar
When the coconut tree is tapped it produces a nutrient-rich "sap" that exudes from the coconut blossoms. This sap is very low glycemic (GI of only 35), is an abundant source of minerals, 17 amino acids, vitamin C, broad-spectrum B vitamins, and has a nearly neutral pH.
Small batches ensure that our pure, low glycemic Nectar, made from this natural sap, is a raw, enzymatically alive product, minimally evaporated at low temperatures (only to remove excess moisture and allow sap to thicken), never exceeding an average summer day in the tropics. Some agave syrups are hydrolyzed at temps up to 140° F for 36 hours, the end product containing 90% fructose, shown to contribute to obesity, liver disorders, and Diabetes.
The naturally sweet, mild flavor of our Nectar is an ideal sweetener for use on pancakes, over cereal, in tea and with all your favorite dessert recipes! (Our delicious Coconut Nectar does not have a coconutty flavor, and does not need refrigeration.)

Very good, but VERY sticky!
Very good, but VERY sticky!
This stuff is STICKY!! It's even more viscous than honey. It IS sweet, but doesn't taste like any other sweetener, and it does add a taste of its own. It's a bit smokey. I love it in ginger tea and coffee, but it isn't like liquid sugar, which only adds sweetness (at least I think that's true...haven't had white sugar in years. Its taste is as strong as dark brown sugar, but it doesn't taste like brown sugar...or maple syrup, either. If you put it in something mild, it might add too much taste. If you put it in something strong tasting, it adds a lovely complexity, like caramelizing might do. If you're cooking carrots and you want to add a slightly complex, sweet and smokey flavor, add just a bit of this nectar, and maybe a little lemon or orange juice and some taragon or rosemary or basil. It's fabulous. I love it in lemonade...it's so exotic. And I love that it has vitamins and minerals. Just don't expect it to taste like sugar.
Nice taste and texture, it's like forest honey

The nectar is very thick, the bottle is larger than expected, which is a nice surprise. It does not have a coconuty flavor, for me, it has a taste like some forest honey. Will buy it again when this bottle will empty, or maybe I'll buy it for someone as a gift. :)
