You're holding the ultimate natural sugar substitute available anywhere at any price. Period.
What: Also known as Xylitol, this is the original, first imported from Finland. It is now made in the USA (not Chinese GMO corn). Since this is a by-products of the furniture industry, no birch trees are cut down for it.
Why: Even though it's a carbohydrate & works exactly like white, brown or raw sugar, The Ultimate Sweetener is metabolized so slowly, it does not affect insulin levels at all. This prevents sugar "highs" & "lows" experienced by people who have hypoglycemia, chronic fatigue, candida (yeast infection), ADHA, & even diabetes.
FYI: White & brown sugar are often produced using slaughterhouse animal bone ash! Only beet, raw & turbinado sugars do not involve this hideous process; however, they still cause blood sugar fluctuation, which are best avoided for optimum health.

I bought this for my partner who is diabetic. It's great for cooking with, but in a cuppa it has a strange sort of cold aftertaste. Actually, not so much a "taste" more a sort of experience. But great for my partner.

Bought this one because I was looking for a birch source, non gmo. It works well for what I'm doing with it.

I don't use sugar on a daily basis, and I'm very careful with sweeteners. But for some recipes, most natural sweeteners will cause a problem in texture, taste or color, and that's when birch sugar becomes really precious. That's why from now I'll always have some in my pantry.
