I use potato flour mixed with tapioca flour for gluten free baking, and so far I have produced the best gluten free results! I got the clue from book Primal Cravings.

You cant make proper Spätzle without it.

I can no longer buy this in any store near me so I went online to search. iHerb not only carried the product but they had a good price and offered quick delivery.

You don't use much of this in gluten-free recipes, but it is called for in some things.
