I am using it on my oatmeal in the morning. It has an unusual, slightly sweet, cocoa like flavor. I am going to try using it in cooking/baking soon. As to its ability to stabilize blood sugar, I don't seem to get too jumpy after a few hours of just cereal for breakfast but it is too soon to tell.
