I love these are gluten free and low carb! I use these for stir-fry, cold salads, etc. They soften up if you put them in something hot if you don't want them crunchy

Tip for use: soak in water with a little lemon juice for about an hour to take away the crunch. Otherwise the noodles are crunchy. Great recipe for cabbage salad on the package. I used more cabbage than called for and it was really enjoyed by all my guests!
