These canned beans with rice are so handy to have on hand for a quick meal. One of my favorite things to do with them is Bake an acorn squash (cut in half, scoop out seeds, turn upside down in buttered dish, and bake till a little soft). Mix these beans and rice with curry powder, chopped pecans, and raisins or dried cranberries, then stuff the squash halves and return to oven to heat thoroughly. So good!

One of my favorites from Eden Foods. I added a tiny bit of Adobo and it almost tasted like Spanish rice from back home. Love it!

Long live this product and its rice and beans brethren! A simple staple, available as a prepared food and without being destroyed by too much salt. In fact, the amount of salt is undetectable. Appropriate and artful seasonings keep it flavorful. Perhaps best of all, it's one of the few canned products in the U.S. that doesn't contain BPA. One star needs to be deducted. While the pinto bean variety is usually cooked to perfection, in some of the other varieties the beans can be a bit crunchy.

I don't usually like eating canned food but this was very tasty and made great burritos and taco salad.
