Garbanzo Bean flour is a healthy alternative to those cornstarch and potato starch combos that appear regularly in gluten free recipes, the garbanzo is protein rich and has fiber. You can use it for breads and pie crusts (with a recipe!) It's not a substitute for wheat more of an alternative with ad-ons. Happy Baking.
I love tapioca flour- it doesn't have such a dry taste as rice sometimes does. I received it promptly and it was sealed well. It was an excellent price - a lot better than Wal Mart's and for those on gluten free diets for life this is a good way to go.
Potato starch is good in many recipes for the gluten free. I personally don't find potato pulp all that healthy, kinda like how I feel about white flour, but it works well - I particularly think it works well in my old 'white flour' recipes ( which I've mainly tried to leave behind). Try this with a cornstarch combo (and xanthan gum) to recreate things like cupcakes and biscuits.
