I baked this as cupcakes at 175 degree Celsius in a fan forced oven and if you are careful about the timing, this tastes great and moist. Follow the instructions and keep mixing to a minimum. I just emptied the entire bag of dry ingredients at one shot into the oil/egg/milk mixture after they have been mixed for 2 minutes and kept mixing time short. Everyone loved it and I love how simple, quick and fuss free this is.
This has a strong vanilla smell and tastes great and moist. Good as a basic recipe for cupcakes for kids and so easy and quick.
I have used the Refreshmint version previously. I prefer that to the Platinum Mint in terms of taste. I was looking for a stronger mint taste to the Refreshmint but the Platinum Mint seems weaker instead.
