Buckwheat Molasses Bread for Bread Machine
Level of Preparation: Intermediate
Total Prep Time: 3 1/2 Hours
Yield: 1 Loaf
- 2 1/4 tsp. active dry yeast
- 1 cup water, less 1 tbsp.
- 3/4 cup Arrowhead Mills Organic Buckwheat Flour
- 3 cups Arrowhead Mills Unbleached White Flour
- 1 tsp Hain Sea Salt
- 4 tbsp. nonfat dry milk or dried soy milk
- 1 Tbsp Hain Vegetable Oil
- 1 large egg
- 2 tbsp. molasses
Place all ingredients in bread machine and push start. Do not use timer. Follow manufacturer's instructions and bake until done.

I bought this flour because I'm on a gluten free (candida) diet and I've read a lot of good things about it. I was surprised by the very strong and unique flavor of this flour and also the unique color of the flour, which is a bluish brown hue with black specs (probably from hulls). I made some bread with it and came to the conclusion that this would be great for making cinnamon/nutmeg pancakes, with xylitol added as a sweetener. I will definitely be making pancakes with these soon.

I use this flour to bake gluten free sourdough bread that doesn't cause my inflammation to flare up.

My dog has allergies and has to be on a special wheat-free, corn-free, egg-free low fat diet, so I make homemade dog biscuits for her using this organic buckwheat flour (which isn't a true wheat at all). I add ginger, organic pumpkin and organic applesauce, mix and roll out, and then cut the treats. I bake them in a 325-degree oven for about 20 minutes, remove and cool, then put them back in a 250-degree oven, turn the oven off in about 15 minutes and leave them there to cool. Twice cooking this way (like biscotti) makes them crunchy and they keep well. These cost me a tiny fraction of what one bag of commercial ones that are nearly the same (except they contain canola oil, which I don't use). My dog loves them! Oh, by the way, I use the flour to make human treats, also! LOL

The four is good but the packaging needs to be improved. These bags were wrapped in plastic bags but there was flour leakage. The bags looked banged up.
