Gluten free baking has come a long way since my wife Charlee and I were experimenting with gluten free flours in our kitchen over two decades ago. Now we have this miraculous flour blend with the xanthan gum built right in, fine-tuned so that your baking recipes come out perfectly. Check out my favorite recipe with this flour below. There's nothing better than warm chocolate chip cookies fresh from the oven.
Scrumptious Blueberry Muffins
- 2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 cup (1 stick) Butter, softened
- 1 1/4 cups plus 1 Tbsp Sugar, divided
- 2 large Eggs
- 1/2 cup Buttermilk
- 1 1/2 cups fresh Blueberries
Preheat oven to 425ºF. Grease a muffin pan with butter or nonstick spray or line with paper baking cups.
Whisk together flour, baking powder and salt. Set aside. In a large bowl, cream together butter and 1 1/4 cups sugar until of the bowl often. Add eggs one at a time, beating well after each addition. Add half the flour mixture and beat until just blended. Beat in buttermilk, then add remaining flour mixture and beat until blended. Gently fold the blueberries into the batter.
Spoon batter into prepared muffin pan. Sprinkle with remaining 1 Tbsp sugar. Place pan in oven and immediately reduce heat to 375ºF. Bake for 30 minutes or until muffins are golden brown. Cool in pan for 5 minutes. Move to wire rack to cool completely. Makes 12 muffins.

It's really good for muffins and shortcrust pastry. It's not completely white (which is a good thing) and baked goods come out fluffy and springy and not crumbly and dry. I heartily recommend it to any gluten free baker.

I tried many recipes for gluten free baking with many disappointments. This flour is the best, this is coming from someone who is a novice in the kitchen. Muffins and biscuits came out perfect. I have already ordered it twice. My husband loves it for pancakes.

I used this to bake vegan gf chocolate cupcakes for the first time and it worked! I fed it to my non-vegan co-workers and they couldn't even tell the difference. I wanted to try gf baking because I have a celiac vegan co-worker and I wanted to let her enjoy some desserts during our company party. It was definitely a hit even for my non-vegan co-workers. I highly recommend this product for gluten-free baking and I suggest finding good recipes on the internet to maximize this product.

I received it damage and all the flour was distributed in box I was really chocked how it was not well packed I have pictures if you want me to send it to you to see how it was :(

Bod's Red Mill has great gluten free flours and this is no exception. This flour blend is convenient, and allows you to use regular recipes to make gluten free baked goods. Not sure how it would work for bread, but it works great for pies and cakes. Will purchase again.
