Spelt is a relative of wheat that dates back to antiquity. While it contains gluten and closely resembles wheat, spelt is so easily digested that many wheat-sensitive people find it a suitable alternative to wheat. Bob's Red Mill Light Spelt Flour has been carefully sifted to remove just enough of the bran and germ to make it great baking flour that's also nutritious.

Suggested Use

Applesauce Spice Cake

1/2 cup Margarine

1 cup packed Brown Sugar

3 large Eggs

2 cups Light Spelt Flour

1 1/2 tsp. Baking Soda

1 1/4 Tbsp. Baking Powder

1/2 tsp. Sea Salt

1 1/2 tsp. Cinnamon

1/2 tsp. Nutmeg

1/2 tsp. Allspice (ground)

1 1/2 cups Applesauce, unsweetened

1 cup Raisins

1/2 cup chopped Walnuts

Preheat oven to 350°F. Prepare a 9 x 13-inch baking pan with nonstick cooking spray. Place the margarine in a mixing bowl, and cream with a fork until soft and smooth. Gradually add the brown sugar, continuing to cream. Add the eggs one at a time, creaming after each addition. In a separate bowl, combine flour, baking soda, baking powder, salt and spices. Stir to mix. Alternately, add small amounts of the flour mixture and applesauce to margarine mixture, stirring until just mixed. Fold in the raisins and nuts. Pour the batter into the prepared pan. Bake for 40 minutes, or until the cake is golden brown - use a toothpick to test.

Cool completely, cut and serve.
