May be used in place of, or in addition to, other sweeteners to feed the yeast in your dough. One teaspoon per loaf will give you bread that is bigger, tastier, and more finely textured than usual. Malted Barley flour is simply barley that has been sprouted, dried and ground into flour.

Barley Tapioca Treats

¼ cup tapioca flour

¼ cup brown rice flour

½ cup Bob's Red Mill malted barley flour

3 tbsp. maple syrup

1 tsp. vanilla extract

½ cup crispy rice cereal

½ cup coconut flakes

Preheat oven to 350 degrees. Lightly oil a cookie sheet with nonstick spray, set aside. Combine the flours and mix well. Add the maple syrup and vanilla extract and mix thoroughly. Carefully stir in the crispy rice cereal and then mix in the coconut. Shape the mixture by teaspoonfuls into small balls and flatten each to a thickness of about 3/8" on the prepared cookie sheet. Bake for 8-10 minutes and remove from oven while they are still soft, but lightly browned. They will harden as they cool. Let them cool for about 30 minutes. Store in an airtight container with a small crust of bread inside to absorb excess moisture
