Bob's Red Mill White Bean Flour is freshly ground on cool and slow turning, century-old stone-buhr millstones from premium quality, small white beans. High in dietary fiber and a good source of iron, magnesium and phosphorus, this nutritious flour has a smooth, nutty flavor. It can be blended with water, milk or other liquids to produce a high fiber, lowfat base for soups, sauces and dips. It's also an excellent ingredient for gluten-free baking when combined with other ingredients such as potato starch, tapioca flour and xanthan gum.

Bob's Red Mill products labeled Gluten Free are batch tested in our quality control laboratory. We use an ELISA Gluten Assay test to determine if a product is gluten free.

Gluten Free Lemon Scones

  • 1 cup Bob's Red Mill White Bean Flour
  • 1 1/2 cups White Rice Flour
  • 5 tsp Baking Powder
  • 2 tsp Xanthan Gum
  • 1/4 cup Honey
  • 1/2 cup Butter, cold
  • 2 Eggs
  • 1 Tbsp Grated Lemon Peel
  • 1/3 cup fresh Lemon Juice
  • 1/2 cup Water

Preheat oven to 400ºF, set aside an ungreased baking sheet. In a large mixing bowl, combine flours, baking powder and xanthan gum; cut in butter with pastry blender. In another bowl, mix together the honey, eggs, grated lemon peel, lemon juice and water. Add liquid mixture to the dry ingredients and stir with fork. Turn dough out onto a lightly floured surface and knead 10 times. Pat dough into round shape 1-inch thick and brush with lemon juice; Sprinkle with 1 tablespoon of granulated sugar. Cut into wedges and place edges onto baking sheet and bake for 30 minutes.

Baking Tip

Nutritious White Bean Flour can be added to many recipes calling for wheat flour, thus forming a complete protein. Replace 2 Tbsp, wheat flour or baking mix with 2 Tbsp White Bean flour for each cup of flour or baking mix.
