Eden, Shiro Miso is pure food of koji fermentation, ages of accumulated wisdom, and solely traditional food handling methods. It is very mellow and the sweetest of all misos, made of North American family farm organic soybeans and rice that are slow aged at ambient temperatures. It is our lowest salt/sodium miso. Shiro Miso is best suited for Summer dishes, and soup, salad dressing, dip sauce, marinades, and noodles.

Suggested Use

Miso Soup - basic

  • 2" pieces Eden Wakame or 1 tsp. Eden Wakame Flakes
  • 4 cups water
  • 2/3 cup onion, thinly sliced
  • 1/2 cup carrot, thinly sliced
  • 2 Tbsp. Eden Shiro Miso, pureed in 2 Tbsp. Eden Shiro Miso, pureed in 2 Tbsp. water, or to taste
  • 1/4 cup green onion, finely shaped

Optional ingredients -

Tofu (any form), shiitake, maitake leafy greens, daikon, louts root, leeks, root vegetables, cooked noodles or mochi is always good.

Wakame flakes - just add, or soak wakame in cold water to cover for 5 minutes and dice before adding. Bring water to a boil and wakame, onion and carrot. Simmer 5 to 7 minutes. Reduce flame to very low. Add pureed miso and simmer without boiling for 2 minutes. Serve garnished w/chopped green onion.

Organic rice, whole hulled organic soybeans, water, sea salt, koji aspergillus oryzae

Great product, not sure expiration date provided by iHerb is accurate

I love this product and had been waiting for a fresh batch to come into stock because for a while what they were selling expired in just a few months. I wanted to get it fresh then transfer to glass before the miso had been sitting for too long in its packaging. What I received contains no expiration date. The expiration date advertised online was January of 2019. The lot number is 170518, which anyone familiar with the dating system in much of the world would read as May 17, 2018. This would not be an acceptable expiration date for my purposes and I would not have purchased if this was the date iHerb was listing on their website. I am curious as to how iHerb determines what expiration date to list for products that don't list an expiry on the package. Generally, I find the things I get from iHerb have the promised expiration date or better, but this time they appear to have mislead me. I've contacted Eden Foods and will update if I get a reply / clarification from them.
