Red Chile Enchilada Sauce

Like pizza and mac-n-cheese, enchiladas offer the satisfying tastes and comforting textures you always return to: tender tortillas rolled around morsels of meat or cheese, bathed with a classic sauce that tastes of sun-dried chiles, roasted garlic and spices.

Suggested Use

Classic Red Chile & Cheese Enchiladas

Makes 4 Enchiladas

4 corn tortillas
About 1- 1/2 cups shredded monterey jack or mild cheddar cheese
1 pouch Frontera Enchilada Sauce

  1. Heat oven to 400°. Wrap tortillas in plastic wrap. Microwave until steamy, about 30 seconds.
  2. Roll 1/4 cup cheese into each warm tortilla. Place side by side in a small baking dish or pie dish, seam-side down.
  3. Completely cover with sauce. Sprinkle with remaining cheese. Bake 15 minutes.

Variation: Substitute shredded cooked chicken or beef for the cheese in the filling.

Tomato (fresh tomato, roasted fresh tomato, tomato puree, calcium chloride and citric acid), water, New Mexico chile pepper, apple cider vinegar, red bell pepper, salt, onion, garlic, evaporated cane juice, spices, xanthan gum.

This enchilada sauce is really good. It packs some spiciness in but not too much for those that can't take the heat. One pack easily covers 4 burritos in a casserole pan.

Of course it's great for enchiladas, but I put it on burritos too. And tofu/bean/veg, uh, creations I throw together. It's mild, but the roasted tomatoes (I guess) really give it a deep flavor. I try to keep several packages at hand to battle homesickness (Texan transplanted to Japan) Gotta re-order! I wonder how different this is to the glass bottle sauce. I notice the glass bottle version has a chicken base. Is the retro pouch sauce vegan?

I am not a fan of spicy food but this sauce is just perfect if you are in the mood for a take away. I simply stir fried chicken, peppers, mushroom and onions and poured in the sauce. I served it on a low-carb tortilla wrap and it felt like I had treated myself to a nice kebab out of the local take-away.

I made this with a filling of mild cheese (gouda-type) and I loved it. The sauce complimented the taste of cheese very well. I also made this with beef, good, but not as delicious as with the cheese-filling.Will buy again and prepare with tofu.
