I'm a Japanese and we often eat this somen noodle in summer. Make sure you cook them, rinse them with ice cold water, and wash it with hands on a strainer. I couldn't find dipping sauce for Japanese noodle in our small town in the US so I made my own sauce with 1 cup tahini, 1 cup miso, 1 or more cups of water. It was delicious! Don't forget to top it with Nori seaweed. Since this is so digestive, sometimes we use it for baby food in Japan (Make sure they are not allergic to wheat, of course). My 3 yrs old loves this!
