Health Secrets of Coconut Nectar

When the coconut tree is tapped it produces a nutrient-rich "sap" that exudes from the coconut blossoms. This sap is very low glycemic (GI of only 35), is an abundant source of minerals, 17 amino acids, vitamin C, broad-spectrum B vitamins, and has a nearly neutral pH.

Small batches ensure that our pure, low glycemic Nectar, made from this natural sap, is a raw, enzymatically alive product, minimally evaporated at low temperatures (only to remove excess moisture and allow sap to thicken), never exceeding an average summer day in the tropics. Some agave syrups are hydrolyzed at temps up to 140° F for 36 hours, the end product containing 90% fructose, shown to contribute to obesity, liver disorders, and Diabetes.

The nectar is very thick, the bottle is larger than expected, which is a nice surprise. It does not have a coconuty flavor, for me, it has a taste like some forest honey. Will buy it again when this bottle will empty, or maybe I'll buy it for someone as a gift. :)

I have always melted coconut blossom sugar granules or blocks (also known as gula melaka where I am from) to get the same sticky sweet syrup for making dessers - now the hard work has been done for me! Have you tried this nectar over coconut-chia-pudding? Add quarter cup chia seeds and 1 cup coconut milk to a jar, put the lid on and shake or stir till all seeds are moistened, put in fridge overnight for the seeds to puff. To serve, scoop the pudding into a cup/bowl/glass and pour lashings of this nectar over it. YUMMMM!!! Here in Southeast Asia, we have numerous desserts made with coconut sugar - try looking for recipes like BIKO from the Philippines, WAJIK from Malaysia, KHAO NIAO MAMUANG (sticky coconut rice with mango) from Thailand, etc. In Vietnamese and Thai cooking, coconut sugar is used anytime sugar is called for in dishes, not just in desserts. There is no end to ways you can use coconut sugar.
